will this seat work with the sentinel 100x angler, if not is there something that would that offers better back support and possibly raise the seat height?
Unfortunately, this seat is not compatible with the sentinel 100x angler.
The backrest you got with your model is the only one compatible right now as this is a new product of 2019, however we are always open to your suggestions.

do these fit the tandem 136T?
Unfortunately, this seat is not easily compatible with our tandem kayaks. While a crafty DIYer could probably figure something out, sitting any higher on the kayak will raise your center of gravity and decrease your primary stability which will cause the kayak to be more tippy.
